| April 13, 2010. Today our feature recipe is actually Japanese gyoza that you can make at home, then for a dipping sauce we love it with a Thai garlic chile mixture and black rice vinegar. We also have a new Thai street vendor video--see basil chicken made on the sidewalk. |

Pickled Ground Chilli With Garlic
Here is something you may not have tried before. It's the foundation of a very tasty dipping sauce, when combined with a tablespoon of black rice vinegar. This is an excellent dip for Gyoza (recipe above), pot stickers, or other dumplings. It blends well with the smoky flavor of black rice vinegar.
Pickled ground chile with garlic has Thai-Chinese roots, and you can find it commonly served as a condiment for soups (especially noodle soup). Keep some on hand when making tom yum or stir-fried seafood--this is what our street vendors are dropping into the wok in these videos:

HOT. New Extra Fine Hot Thai Chile Powder, Hand Brand
Hand Brand is well-known as the highest quality producer of spices in Thailand, after more than 60 years in business. Now we have their hottest Thai chile powder, ground up into a fine powder. Pop the lid and shake a bit out. This is the easiest way to give any meal an instant kick of true Thai chile heat. It is extremely hot Thai ground Thai chile.
Recently we found that combining a bit of this powder with salt, kaffir lime leaf powder, and ground up Szechuan peppers makes an interesting citrusy-spicy popcorn salt.
The nice plastic jar is 4" tall. 20 grams, or .7 oz. Enough to last a long time. We are offering this for an attractive price for our newsletter readers.
Ingredients: Dried hot chili. Product of Thailand.

Fresh kaffir lime leaves are in very short supply right now, and we're not sure for how much longer. We did just receive a small shipment of fresh kaffir lime leaves, and rather than sell them we are going to add them to the Fresh Thai Produce Kit for no charge. Order here and we'll arrange immediate shipment.
Our Fresh Thai Produce Kit offers 2 lbs fresh lemongrass, 8 oz fresh Thai chile peppers, 8 oz fresh galangal, 2-3 fresh limes, and while supplies last you will also get approximately 40 fresh kaffir limes leaves at no extra charge.
Please Note: Produce ships via USPS (2-3 Day) so please provide an address that can be used for USPS delivery. If you order only fresh produce, select "$0.00" as shipping charge at checkout (because the price above includes shipping). If you order fresh produce and any other items, you must checkout with "UPS Ground" as the shipping method, and you will receive the other items separately.

NEW: Delicious (and Expensive) BBQ Sauce From Japan
We offered this two weeks ago and quickly sold out of four cases. Now we have two more cases, and that will be our final supply of this expensive Japanese bbq sauce.
At first we thought it might be a mistake, when we heard the price, but no it's a genuine price. And the product is in limited supply according to our Japanese wholesaler, so it's likely made in small batches. This is new stock just arrived from Japan.
It's called Yakiniku No Tara Amakara. Use this to marinade meat of your choice (we tried it with chicken first, then halibut). After marinating in a small amount of the sauce for 2 hours, we grilled the chicken breast on medium heat, as shown below. Then the sauce is served in a side dish for dipping.
The flavor is a real treat. Subtle hint of chile spice, with sesame, salty soy sauce, and an elegant fragrance. It's worth the high price just to try it once. We know you'll like it.
Packed in a nice glass bottle with a clever plastic lid that also serves as a pouring spout. Ingredients: soy sauce (skimmed soybean, soybean, wheat, salt), sugar, water, soybean paste (soybean, rice, salt), invert sugar, dextrin, red pepper, sesame seed oil, fermented seasoning (alcohol, salt, rice), garlic, cooking wine (glutinous rice, malted rice, alcohol, sugar), sesame seed, black pepper, msg. Product of Japan. |
