In 10 years of shipping fresh Thai produce we've never seen this quality. Usually our Thai chiles are green color with somewhat mild heat and flavor.
Once or twice a year a shipment arrives with excellent high-heat flavor and beautiful red color--that just happened last week. These fresh red chiles have a very strong, true Thai chile heat. Stems are nice and green, fresh pick. We shipped a few lbs to a chef who emailed back and said they were the best he's ever seen.
